Butter Cookies @ 5:30 PM

During Christmas at Kananaskis, my supervisor's mom made delicious butter cookies for all the banquets staff to eat while work.  It was so delicious that I still have cravings for them after Christmas! So, here I am on vacation back at home and I decided to make my very own butter cookies in my new house :)

The following recipe yields 3 dozens! :)

Ingredients:
- 1 cup butter
- 1 cup white sugar
- 1 egg
- 2 2/3 cups all-purpose flour
- 1/4 teaspoon salt
- 2 teaspoons vanilla extract

Procedure:
1) In a large bowl, cream together the butter and white sugar until light and fluffy.
2) Beat in the egg, then stir in the vanilla.
3) Combine the flour and salt; stir into the sugar mixture
4) Shape dough into small balls and place on ungreased cookie sheets. Flatten them when on ungreased cookie sheets.
5) Press an almond half onto the top of each cookie (optional).
6) Preheat oven to 325-400F depending on your oven.
7) Bake for 8 to 12 minutes in the preheat oven or until lightly golden at the edges.
8) Remove from cookie sheets to cool on wire rack.
