White Chocolate Macadamia Cookies @ 5:30 PM
I don't know when, but I fell in love with this type of cookies the first time I tried it. I like the chewiness of the cookie but yet there's a bit of nuts and chocolate that make it so delicious and something to linger in your mouth a bit longer. I don't know if this make sense but I love these cookies. I don't usually eat anything with nuts because I'm not a big fan of it, but these cookies are an exception. I really want to make this when I get home... but for now, I will just post this recipe and make it later. There's approximately 4 more months till I get home for my vacation. I can't wait to make all these sweet stuff and food :) Stay tuned!
Ingredients:
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup butter (1 stick), softened
- 1/2 cup packed brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 3/4 cup white chocolate baking chips
- 1 cup chopped macadamia nuts
Preparation:
1. Preheat oven to 375F. In small bowl, combine flour, baking soda, and salt
2. In a large bowl, with mixer at medium speed, beat butter, brown sugar and granulated sugar until light and fluffy. Beat in egg and vanilla extract until well combined.
3. In the same bowl, reducing speed to low; beat in flour mixture just until blended.
4. In the same bowl and using a wooden spoon, stir in white chocolate baking chips and macadamia nuts
5. Drop dough by rounded tablespoons, 2 inches apart, onto two ungreased cookie sheets.
6. Bake until golden around edges, 10 to 12 minutes, rotating cookie sheet between upper and lower racks halfway through baking.
7. With wide spatula, transfer cookies to wire racks to cool completely.
