Cheesecake Brownie Squares @ 12:17 AM

I've learn this recipe in a small group meeting back in grade 11 or grade 12.  It is a very delicious piece of dessert especially when it is fresh out of the oven.  I hope you will like it too. It's a fun dessert, especially when you make it with friends.  Eating a small piece will be good, because it might be too filling.  Good for a party with a large group of people. :)
Ingredients
(Yield: 8 inch square baking pan - 20 small squares)
Brownie Batter:
- 3 oz bittersweet chocolate, chopped
- 1/3 cup butter
- 3/4 sugar
- 2 eggs
- 1 tsp vanilla
- 3/4 cup flour
- 1 tsp baking powder
- 1/2 tsp salt

Cheesecake Layer:
- 1 cup softened cream cheese (brick style)
- 1/3 cup sugar
- 1 egg
- 1 tsp instant coffee granules
- 1 tsp vanilla
- 1 tbsp flour


Procedure
Brownie Batter:
1. In a double boiler, melt chocolate with butter. Let cool a bit.
2. Whisk in sugar, eggs, and vanilla.
3. Stir in the flour, baking powder and salt, then set aside.

Cheesecake Layer:
1. In a bowl with an electric mixer, beat the cream cheese until smooth.
2. Add the sugar and beat well.
3. Beat in the egg.
4. Dissolved the coffee granules in the vanilla and add to cream cheese mixture, continuing to beat until combined.
5. Stir in flour.

Baking Procedures
1. Preheat oven to 350 F. Line an 8 inch square baking pan with greased foil, leaving a 1/2 inch overhang on the sides.
2. Remove 1/2 cup of brownie batter to a small bowl and set aside.
3. Spread the remaining batter in the square baking pan.
4. Spread the cheesecake batter over top.
5. Next, drop the reserved brownie batter by the spoonful over top of the cheesecake batter.
6. Run a knife through the batter to make it swirl.
7. Bake the brownies for about 30-35 minutes, or until a knife inserted into the center comes out clean.
8. Let cool in the pan


* Serve hot or chilled.
