White Chocolate Cheesecake @ 7:39 PM
I'm not a fan of white chocolate, but this is a must try. I haven't actually made one myself, but I've ate plenty while working at the hotel in Alberta. It's so delicious, the cheesecake melts right in your mouth, and it's not too sweet. Perfect for any occasion.
Ingredients
Crust
- 1 1/4 cup shortbread crumbs
- 1/4 cup ground almonds
- 2 tbsp sugar
- 1/8 tsp almond extract
- 3 tbsp melted butter
Filling
- 6 oz. white chocolate (chopped)
- 3 8 oz. package cream cheese (soft)
- 8 oz package light cream cheese (soft)
- 5 large eggs (at room temperature)
- 3/4 cups sugar
- 3 tbsp flour
- 1 tsp vanilla
- 1/4 tsp almond extract
Procedure
1. Mix ingredients for the crust and press into the bottom of a springform pan. Bake at 400F for 5-6 minutes.
2. Remove from oven and cool. When cool, grease the sides of the pan lightly.
3. Melt and cool the chocolate
4. Mix together cream cheeses, then add eggs, one at a time.
5. Mix in sugar, flour, vanilla, and almond extract. Stir 1 cup of mixture into the chocolate, then mix all.
6. Pour into the pan and bake at 325F for 40 minutes.
