Banana Bread @ 9:25 PM

Banana bread is something one can easily make. It's a simple recipe that you can eat anytime of the day--breakfast, lunch, dinner, and even snacks. This recipe was also used in one of my courses where we need to analyze for it's cost during a food costing course.  It is nutritious since it contains fruit right?! Well, I hope you will like this recipe! Enjoy! :)
Ingredients
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 cup butter
- 3/4 cup brown sugar
- 2 eggs, beaten
- 2 1/3 cups mashed overripe bananas
- 3/4 cup chopped walnuts (optional)


Directions
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
2. In a large bowl, combine flour, baking soda and salt.
3. In a separate bowl, cream together butter and brown sugar.
4. Stir in eggs and mashed bananas until well blended.
5a. Stir banana mixture into flour mixture; stir just to moisten.
5b. (optional) Add the chopped walnuts into the mixture.
6. Pour batter into prepared loaf pan.
7. Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
